Barley with porcini mushrooms is a dish prepared in the best traditions of Russian cuisine. If you want to surprise and please your guests, prepare barley with porcini mushrooms for them.

Water 1 l
Porcini mushrooms 600 g
Pearl barley 300 g
Onion 1 pc
Carrot 1 pc
Vegetable oil 4-5 tbsp. l.
Salt 1/2 tsp
Parsley (greens) 1 bunch
Ground black pepper to taste
Measure out and rinse well 300 grams of pearl barley.
Pour pearl barley in a bowl with cold water and leave for 15 minutes.
Put the barley in a saucepan, add 1 liter of water and cook, after boiling, reduce heat and cook, stirring occasionally, for 15-20 minutes until soft.
Sort out 600 grams of porcini mushrooms, wash well and dry.
Cook the pearl barley until half cooked, do not boil it.
Throw the almost finished barley in a colander and rinse.
Pour 4-5 tablespoons of vegetable oil into a saucepan.
Add finely chopped onion and diced carrots.
Fry vegetables in vegetable oil for 2-3 minutes.
Add chopped mushrooms and cook for 4-5 minutes, stirring occasionally.
Add barley to mushrooms with vegetables. Add 1/2 teaspoon salt and black pepper to taste. Cook over low heat for 10-15 minutes, stirring occasionally.
Sprinkle barley with porcini mushrooms with finely chopped parsley.
Barley with porcini mushrooms is ready. Can be served at the table.
