Baked potato salad with olives

First of all, we want to present such a simple salad using selected early harvest potatoes, which we will bake in the oven. This dish can be served not only as a salad, but also perfect for an everyday summer lunch.

Pre-wash the small potatoes in salted water and halve them.

Turn on the oven. Spread a sheet of parchment paper on a baking sheet. Place the potatoes, cut on top, drizzle with olive oil, sprinkle vegetables with rosemary, salt and pepper. Transfer to oven and bake for 20 minutes.

Meanwhile, while the potatoes are baking, the rest of the salad needs to be cooked. Chop the olives, tear the greens with your hands and combine them.

When the potatoes are ready, transfer and let cool slightly. Then put in a salad bowl with olives and herbs. Pour lemon juice over the top and mix thoroughly.
