Lime cookies with creamy coconut filling

Cream products: 225 g cream cheese, 100 g butter, 1 teaspoon vanilla sugar, 450 g coconut

One hour before the start of the main process, you must first knead the dough for our exotic cookies.

Lime Cookie Dough Recipe

Combine flour, starch and a small amount of salt in a deep bowl. Using a mixer, beat the butter and 2/3 cup powdered sugar until airy, about 4 minutes.

Then add lime juice and zest, vanilla powder and mix until smooth. Continuing to beat, add the above prepared mixture of flour and starch in portions. Knead to a homogeneous dough.

Divide the finished dough into 4 parts, roll each into sausages, wrap in plastic or parchment paper and send to the freezer for one hour.

If part of the dough turns out to be superfluous, then it can be stored in the refrigerator for about a month and used as needed.

After a while, turn on the oven and preheat to 180 degrees. Remove the chilled dough from the refrigerator and cut into moderately thin slices as shown in the photos.

Line a baking sheet with kitchen paper and line the baked goods. Send to the oven and cook for 10-12 minutes, until lightly browned. When ready, transfer the cookies to the wire rack and cool down.

In the meantime, prepare the creamy coconut filling:

In a small bowl, combine the cream cheese, vanilla and butter. Whisk everything in a food processor. Add 450 grams of flaked coconut and stir.

The filling is ready!

Squeeze some coconut cream onto one half of the baked goods with a pastry syringe and place the rest of the lime cookies on top of them.
