First, cut the meat into cubes 2-2.5 centimeters thick. Heat 1 tablespoon of vegetable oil in a medium saucepan and brown the meat on both sides. Season with salt and pepper.
Cook the meat in small portions so that there is enough space between the pieces. If you dump everything in one heap, the meat, of course, will cook, but it will be gray, and the juice that is inside will simply evaporate.
For beautiful, ruddy pieces of meat, make sure it is dry beforehand, you can even blot it with a paper towel. If the meat is moist, it will not have a crispy crust and thus the inner juice will evaporate.
Saute each portion of meat over high to medium heat without adding a new portion until the previous portion is completely cooked. This will give you a beautiful golden brown crust and a very appetizing appearance. Inside, the pieces are juicy, soft and rich in aromas.
Leave the meat aside, melt 1 tablespoon of butter in the same saucepan or pot that you don't need to wash beforehand. Peel and finely chop the onion.
