At the beginning, first of all, we prepare the curd dough:
Mix 250 grams of flour with cold butter until the two combined ingredients are crumbled.
Put the main product in the cooked cream crumbs: cottage cheese, then a beaten egg, salt and sugar.
Combine the baking powder with the remaining 50 g of flour and gradually add and knead the dough.
Depending on the moisture content of the curd, the amount of flour may vary. And most importantly, the curd dough should be kneaded quickly. As a result, it should turn out to be moderately soft and stop sticking to your hands.
Divide the dough into 2 parts, wrap in plastic wrap and refrigerate for 1 hour. Such a dough can be stored in this way for several days.
Roll out the present dough thinly, while it is necessary to constantly sprinkle with flour. The rolled layer should be divided into four equal parts, and each divided part should be divided into 4-5 parts, as a result of which we get the original size of the bagels.
Next, we will start the dough. You can use any fruit or berry jam, the main thing is that it is thick. This recipe uses plum jam. The filling needs to be added very little, otherwise it may leak out, which is not desirable.
It is very important to carefully and correctly twist the bagel, moderately tightly and trying not to press down too much. The bagels should be twisted very freely, so that the tip does not press down on the lower twisted part, which should increase in volume during the baking process.
Cover the baking sheet with baking paper and lay out the bagels with the tip down, leaving a small distance between them.
We bake croissants in a preheated oven at a temperature of 200 degrees, for about 15 to 20 minutes, depending on the characteristics of your oven, until a light ruddy color.
