Pizza with figs and goat cheese

Introducing a pizza with fresh figs, caramelized onions, fresh arugula, maple juice and balsamic vinegar. Everything is clear with the filling. It is better to make the cake thinner - you get a delicious crispy crust.

How to make a delicious fig and cheese pizza

To prepare the dough, combine water, sugar and yeast in a small bowl. Beat until foamy, about 10 minutes. Good quality yeast will ferment and a foam will form. Otherwise, it is better to replace them with more recent ones.

In a separate large bowl, combine flour and salt. Add yeast mixture and pour in olive oil. mix everything until smooth.

Transfer the dough to a floured cutting board. Knead the dough for 5 minutes, shape into a ball.

Place the dough in a greased bowl. Cover the bowl with cling film and place in a warm place for 1.5-2 hours until it doubles in size.

Meanwhile, make a sauce with balsamic vinegar, maple syrup, and caramelized onions. Pour balsamic vinegar and maple syrup into a small saucepan and simmer over medium heat for about 15-20 minutes, until the liquid has reduced to? its original volume. Check the sauce regularly and stir constantly so it doesn't burn.

When done, the sauce will darken and look like chocolate syrup.

In order to get caramelized onions, they need to be peeled, chopped and placed in a dry frying pan. Place skillet over medium heat and cover.

Check and stir the onions constantly for about 5-7 minutes, until they have a nice golden color. Add 100 milliliters of water to the saucepan, stir the onions well and scrape off any burnt pieces from the dishes that remain at the bottom. After the water has boiled away, add 1 tablespoon of olive oil and salt, and continue cooking the onion for about 5 minutes. At the end of cooking, the onions should have a deep dark brown color and a sweet aroma.

After the dough has doubled in size, you can harvest and bake the pizza. Preheat oven to 230 degrees and place a baking sheet in it.

Place a dough ball on a floured work surface. You need to roll it out, moving from the center to the top and bottom edges. Add a little more flour to prevent the dough from sticking to the table or rolling pin. The result is a circle with a diameter of 30-35 cm.

Pierce the dough with a fork in several places.

Sprinkle cornmeal on a light cutting board and transfer the pizza dough to it. Brush it on top with a pastry brush with olive oil.

Peel the figs, cut them in half, and then cut each half into thirds. Place the caramelized onions, chopped figs and goat cheese on top of the pizza dough. Make sure to spread the filling evenly.

Gently transfer the collected pizza to a preheated baking sheet. Bake for 10-12 minutes until desired doneness.

Let the finished pizza cool slightly. You can then garnish with fresh arugula on top and drizzle with balsamic sauce. Cut a slice and enjoy!
