Preheat oven to 200 degrees Celsius, place a wire rack in the center of the oven. Use a knife or special scissors to divide and slightly open only the bottom of the chicken. In a separate bowl, combine butter, mustard, honey, minced garlic, rosemary, squeezed lemon juice, salt, red and black pepper. Stir and pour into a small baking tray. Place the chicken there and use a brush to rub the marinade, while piercing the meat with a fork.

Divide the remaining garlic cloves in half and distribute under the chicken. You can also slip in a few slices of lemon. Wrap the whole thing with foil and make several cuts on the sides of the foil for circulation. Place the chicken in the oven for an hour and a half.

After one hour, uncover the foil and place it back in the oven for about 20 minutes more, until golden brown.

When done, transfer the baked chicken to a flat dish, add fresh herbs and lemon wedges.
