Like most first courses, the prefabricated fish hodgepodge is not picky about the products and is definitely prepared quickly. For its preparation, it is recommended to use exclusively fresh fish, not very small and less bony. As for the rest, the name speaks for itself - a fish hodgepodge - which means that you can experiment with products.

Contrary to all the rules, our recipe contains potatoes, without which the dish would seem empty and less tasty to us, like many other soups.

How to make fish hodgepodge

Prepare all the food you need to make your fish soup.

Delicious fish hodgepodge is made from fresh sturgeon or beluga, which, unfortunately, are difficult to find on the shelves of our stores. That is why, we will cook our soup from red fish: for this, you need to wash the fish, separate it from the bones and put it in a pot of water. Add a few peas and bay leaves. Boil for 20 minutes, until tender.

Cut the boiled fish into moderately small pieces, about one and a half centimeters each, or not in long strips.

Heat the oil in a separate saucepan and fry the diced onions until they are translucent. Add tomato paste.

Then put the potatoes, cut also not coarsely, salt and pour half a glass of boiled water. Cover with a lid and cook over low heat.

Add pickled cucumbers cut into thin half rings, put all the pre-boiled fish.

Pour the strained fish broth into a saucepan. Add all kinds of spices to taste, bring to a boil and continue to cook - 30 minutes, over low heat. We put a sieve on the pan and filter the finished broth. Add the seasoning and cook for 10-15 minutes until the fish is ready. It is advisable to take seasoning for fish in the market by weight, then the hodgepodge will be more fragrant. Salt, pepper, taste the broth. We turn off the gas and leave it to brew for a few minutes, after about 15 - 20 minutes our fish hodgepodge will be ready.

At the end of cooking, turn off the stove, put the chopped olives and let it brew for about 20 minutes or more. We pour it into ceramic pots to keep warm longer and traditionally decorate with lemon wedges.
