Creamy meatball soup

Second, as an option for children's and dietary menus, meatballs can be prepared from minced chicken or turkey. And yet, add melted cheese, as well as a small amount of flour, diluted with warm broth, and thereby make the creamy soup thicker and more saturated.

    Creamy Meatball and Cauliflower Soup Recipe

  1. In a frying pan, or better immediately in a thick-walled saucepan with butter, sauté grated carrots and onions until the vegetables are soft and juice begins to flow.

  2. Add finely chopped celery to the finished ground beef, beat in one egg, season with salt and pepper. Stir and form small meatballs into round balls.

  3. Cut the bell pepper into thin strips, fry for 2 minutes with the onions and carrots, pour boiling water over the vegetables, bring to a boil, dip the meatballs and cauliflower in the boiling liquid.

  4. Cover the saucepan and simmer the meatball soup over low heat until the minced meat is done. Then add sour cream or cream, bring to a light boil again, add salt and cook for another 10 minutes over low heat.

  5. Light and nutritious creamy soup with meatballs and cauliflower is ready. When serving, add minced meat, cauliflower to a plate, cover with broth and sprinkle with fresh chopped dill.
