How to Make Eggplant Caviar - Best Recipe
It is advisable to fry eggplants and red peppers for caviar on a fire, it is better to do this on a grill - this way the workpiece is enriched with a characteristic haze aroma. However, if this is not possible, then the vegetables should be baked in the oven or on a divider. Eggplant and peppers should be soft and almost charred.
Without letting the vegetables cool, they must be peeled. In order not to burn your fingers, you need to put a bowl of cold water next to it and cool your hands in it, at the same time washing off the pieces of peeled skin. The tails of the eggplant should be cut off. The seeds must be removed from the peppers. If desired, 1-2 hot peppers can be added to eggplant caviar with tomatoes, they should be prepared in the same way as all vegetables except tomatoes, fried and peeled.
The tomatoes must be scalded. Then they should be peeled off. Cut each tomato and remove the white flesh around the stem. Onions must be peeled and cut into 4 pieces.

The classic composition includes: eggplant, bell peppers, tomatoes, carrots, onions, garlic, parsley and dill, as well as vegetable oil, salt and hot ground black or chilli peppers.
To prepare caviar, the classic eggplant is baked. This is how the eggplant mash was prepared in the old days by adding all kinds of vegetables.
Eggplant caviar from mushrooms and vegetables
1 eggplant, about 200 g of champignons, 1 head of onion, 2 ripe tomatoes, 4 cloves of garlic, 1 tbsp. a spoonful of vegetable oil, 1 tbsp. a spoonful of vinegar, salt and black allspice to taste.
Bake the eggplants in the oven at 180 degrees until the skin is noticeably darker and wrinkles. After cooling slightly, separate the skin and cut into small pieces.
Peel and rinse the mushrooms, boil in salted water and divide in the same way as the eggplant.
On a coarse grater, grate the onion, garlic cloves and tomatoes. Combine with eggplants and mushrooms, cover with vinegar and oil, salt and pepper.
Having cooled the vegetable caviar from the mushrooms in the refrigerator, you can serve it to the table in a separate dish or in the form of sandwiches spread on bread.
Simple and Traditional Eggplant Caviar
Rinse, dry and peel the eggplants, cut into small cubes, salt and fry in a little vegetable oil until softened.
Cut the onions into half rings, and then divide into smaller pieces. Cut the carrots into small cubes and fry them separately until the vegetables are running.
Add diced bell peppers to a skillet with onions and carrots, and continue frying for another 5-6 minutes.
Add tomatoes, chopped not coarsely to the softened vegetables, salt and mix. Cook with the lid on over low heat until the tomatoes are fully juiced.
Finally, add the fried eggplant, grated garlic, sprinkle with salt, black pepper and mix thoroughly. Cover and simmer all vegetables for another 10 minutes.
When ready, cool the eggplant caviar, and then you can consume it. And for preservation, for long-term storage, pour into jars extremely hot.
