Divide the two eggs into yolks and whites. Set aside the whites, they will be needed for the filling, and grind the yolks by adding half a glass of sugar.
Add soft (not melted margarine) to the egg mass and grind thoroughly until smooth.
Pour a tablespoon of mayonnaise into the mass, stir. Add soda, quenched with lemon juice.
Pouring flour in parts, knead a soft shortbread dough for the pie.
Then, put it in a parchment-lined form, forming sides and refrigerate for about half an hour.
Grind the curd with half a glass of sugar and a whole egg in a food processor or blender.
Cut the peaches into cubes, leaving half of one peach for garnish.
Beat the whites a little with the remaining sugar.
Mix curd mass with chopped peaches and whites and add two tablespoons of semolina.
Sprinkle the pre-chilled dough with the rest of the semolina.
Pour the curd-fruit filling over the dough, trim and top with chopped peach slices. Sprinkle with poppy seeds if desired. Bake cottage cheese pie with peaches in an oven preheated to 220 degrees for one hour.
