We offer a recipe for a French pie - quiche lauren, aka Laransky pie. In our concept, this is an ordinary open pie filled with a mixture of eggs, milk, cream, along with chicken and cheese. Well, it turns out very tasty. And you should definitely cook and taste it.
The baking process will take place in two stages. First, you first need to bake the cake until half cooked, and then all together. If this is not done, then the liquid mixture, where milk is present, will saturate the raw dough and the cake will turn out to be softened, which is not desirable - this is the second and most important thing: this is how we synchronize the cooking time, otherwise, at the end of baking, or the dough will remain raw or the filling will burn out.
Chicken Quiche Lauren Pie with Beaten Eggs and Cheese Recipe
Prepare all the ingredients you need to make quiche lauren:
prepare a pie dough (yeast or classic - creamy shortbread), finely chop the meat, pass the cheese through a grater, rinse and chop the herbs.
On a flat work surface, roll out the dough in a volume slightly larger than the form in which you will bake. Approximate thickness - 3-5 mm., No more.
Lubricate the mold with oil, place the dough in it, pressing along the bottom and pulling the sides, it will form sides 3 cm high.
Place in a preheated oven, bake at 180 degrees for 15 minutes, until the dough is lightly browned. Then remove.
In the meantime, prepare the pie filling:
in a deep bowl, beat the eggs, pour in the cream and milk, mix until smooth, add chicken, cheese, onion, parsley, salt and pepper, stir everything thoroughly.
Pour the cooked chicken and cheese whipped egg filling into the chilled pie crust.
Bake in the oven for 20 minutes, until the base turns golden, while the filling should slightly increase in volume, become more dense and fluffy.
You can check the readiness of the baking with a wooden skewer, piercing the center of the cake. If the filling doesn't stick and the skewer stays clean, then the chicken quiche is ready.
