Barley porridge is a rare guest on our tables, but in vain. Properly prepared barley is very tasty and will surely please your loved ones. We suggest making a simple and hearty barley porridge with mushrooms, which can be easily and quickly prepared for lunch.
You can choose any fresh mushrooms for the dish. Honey mushrooms, champignons, oyster mushrooms are suitable. For an extra mushroom flavor, I recommend adding mushroom flour as a seasoning. It can be easily made from dried porcini mushrooms using a coffee grinder. Dishes are best prepared in a thick-walled ceramic pot or pot. Read the classic barley recipe here.
Soak the pearl barley for 2 hours. Rinse, cover with clean water and cook for 25 minutes. Drain the water.
Rinse the mushrooms, dry and cut into oblong pieces.
Peel the onion, chop with a knife.
Grate carrots on a medium grater or chop finely.
Fry the prepared vegetables in vegetable oil until transparent.
Transfer the pre-soaked pearl barley into a saucepan. Add spices, salt, pepper and chopped garlic. Mix. Pour in 100 ml of water, simmer the dish for 10 minutes over low heat or in the oven.
Put the prepared porridge on a serving plate, sprinkle with finely chopped parsley and serve.
Barley with mushrooms turns out to be crumbly and fragrant, and also looks very appetizing on the table and is eaten without a trace.
