Put fresh cottage cheese in an enamel saucepan.
Pour milk at room temperature over the curd.
Stir the mixture until smooth with a whisk. Place the saucepan over medium heat. With constant stirring, bring the contents of the saucepan to a boil and simmer for 1-2 minutes.
The result should be a homogeneous mass. Remove from heat and cool.
Cover the colander with 3-4 layers of gauze. Strain the curd mass.
Squeeze the resulting cheese or put it under the load for 30 minutes.
Put the mixture in a saucepan. Grind cloves and heather in a mortar. Add salt, soda and spices to the curd.
