Bake the apples in the oven and separate the pulp.
Separate the egg whites from the yolks. Beat the yolks with sugar until creamy.
Heat the milk over medium heat, pour in the semolina and bring to a boil. Reduce heat and simmer for 10 minutes. Gradually pour in the yolks, stirring occasionally, not allowing to boil.
Remove from heat and stir in the applesauce and lemon juice. Let cool.
Beat the whites until stiff.
Mix gently with the rest of the mixture. Place in bowls and refrigerate. Garnish with any fruit when serving.
