Eggplant in a spicy sauce for the winter

Eggplant in a spicy sauce for the winter is a delicious appetizer for any festive table. This recipe will help you cook eggplant in a hot sauce for the winter.

Eggplant 1 kg

Bulb onions 300 g

Bulgarian pepper 300 g

Unrefined sunflower oil TM "Aleika" 100 ml

Tomato paste 100 g

Vinegar 9% 50 ml

Hot red pepper 1-2 pcs

Sugar 1 tbsp. l.

Salt 1 tbsp l.


Rinse and dry the eggplants.

Peel the onion, remove the seeds from the bell peppers.

Fry vegetables for 4-5 minutes, stirring occasionally.

Cut the eggplants into long cubes.

Add eggplants to vegetables.

Add tomato paste and water, stir.

Add salt and sugar.

Peel hot peppers from seeds, chop finely and add to eggplants, mix well.

Simmer over medium heat for 30-35 minutes.

Add 9% vinegar and stir, keep on fire for 3-5 minutes and turn off.

Arrange hot in clean and dry jars.

Screw on the lids and leave to cool in a warm place.
