Eggplant appetizer with pepper and cheese

This appetizer is eggplant with pepper and cheese and an appetizer and salad. A very tasty eggplant dish that is easy and simple to prepare.

Eggplant 2 pcs

Bell pepper 1 pc

Vegetable oil 2 tbsp. l.

Feta cheese 50 g

Salt to taste

Pepper to taste


Wash eggplants and peppers well.

Peel and cut into cubes.

Fry in vegetable oil for 7-10 minutes, stirring occasionally, over medium heat.

Cut the leeks into small pieces.

Add to the pan and fry for another 2-3 minutes, stirring occasionally. Season with salt and pepper.

Cool slightly and put on a dish. Add the diced cheese.

Decorate with a sprig of greenery.
