Pickled mushrooms

Honey mushrooms 2-3 kg

Marinade water 1 l

Sugar 1 tsp

Salt 1 tbsp l.

Vinegar essence 70% or 3 tbsp. spoons of 9% vinegar 1/2 tsp.

Black peppercorns 5-7 pcs

Bay leaf 2-3 pcs

Dill umbrellas or 1/4 teaspoon of dill seeds 1-2 pcs


Sort the mushrooms by size and take only small ones. Cut the legs in half. You should get about 1.5-2 kg of small or medium mushrooms.

Honey mushrooms rinse well to let the water drain. Rinse again.

Put honey mushrooms in a saucepan and pour cold water and wait for boiling.

After the mushrooms boil, drain the water, rinse the mushrooms.

Pour again with water and after boiling, cook for 10-15 minutes. Add salt, sugar and spices based on 1 liter of water 1 tsp sugar, 1 tbsp. spoon of salt, 5-7 peas of black pepper, 2-3 bay leaves, 1-2 umbrellas of dill or 1/4 teaspoon of dill seeds. Add 70% vinegar essence at the rate of 1 liter of water 1/2 tsp or 3 tbsp. spoons of 9% vinegar.

Catch with a slotted spoon and transfer honey mushrooms to jars, pouring them with the rest of the water from the pan.

Close the lids and let cool warm.

Pickled mushrooms are ready. Keep refrigerated.
