Eggplant for the winter "You will lick your fingers", this is a delicious appetizer made from halves of eggplant in vegetable filling. These eggplants will decorate any festive table.

Eggplant 1 kg

Bulgarian pepper 1/2 kg

Tomatoes 1/2 kg

Head of garlic 1 pc

Greens 1 bunch

Salt 2 tbsp l.

Sugar 1 tbsp. l.

Vinegar essence 70% to taste


Rinse the eggplants and remove the tails.

Put the eggplants in a saucepan and cover with water, add 1 tablespoon of salt.

Cook for 20 minutes, covered.

Cool the eggplants in water.

Rinse the tomatoes, peel the pepper and garlic.

Skip vegetables through a meat grinder.

Cut the eggplants into halves.

Add finely chopped parsley to the vegetable dressing.

Add 1 tablespoon of salt and 1 tablespoon of sugar, mix well.

Put a clean jar horizontally and lay the halves of the eggplant, pouring the dressing over them.

Put the cans to the top, fill the voids with a gas station.

Cover with lids and put on sterilization, after boiling, keep a liter jar for 30 minutes

Add 1 teaspoon of vinegar essence, roll up the jars and heat until cool.

Eggplants for the winter "Lick your fingers" are ready. Store in a cellar.
