Add flour while stirring.
Put in a water bath and heat until thickened.
Remove and put to cool, you can transfer to another bowl and put in the cold.
Put the swollen gelatin on fire, heat until boiling.
Beat the whites until a thick foam forms.
Add the remaining sugar and continue whisking, add gelatin in a thin stream. Mix the yolk mass with the protein mass.
