Rinse and dry the ribs.
Grate the carrots, chop the onion not coarsely.
Heat vegetable oil in a cauldron. Fry the ribs for 2-3 minutes.
Add onions and carrots to the cauldron, fry for 2 minutes.
Dice the peppers and tomatoes. Add vegetables to the cauldron. Fry for another 2 minutes. Pour water to the level of vegetables. Cover and cook over medium heat for 15-20 minutes. Stirring.
Chop the herbs, chop the garlic.
Combine the garlic, parsley and pepper mixture. Mix well and add vinegar 9%. Remove to infuse for 10-15 minutes.
Salt the soup to taste and add herbs, remove from heat and leave covered for 10 minutes.
Boil the noodles or spaghetti and serve the noodles with soup in deep bowls.
