Lean pickle in vegetable broth

A delicious lean pickle with pickles and barley is not at all difficult to prepare, and even those who do not fast will like it.

Cooking time 30 minutes


Water 3 l

Pickled cucumbers 3 pcs

Potatoes 2 pcs

Pearl barley 4-5 tbsp. l.

Carrot 1 pc

Onion 1 pc

Tomato paste 3 tbsp l.

Vegetable oil 2 tbsp. l.

Bay leaf 1 to taste

Black peppercorns 3-4 pcs

Dried dill to taste

Salt to taste


Soak pearl barley for 2-3 hours, boil and rinse.

Peel potatoes, onions and carrots.

Pour water into a saucepan and add diced potatoes, cook.

In a frying pan with vegetable oil, fry finely chopped onions and diced carrots.

Dice the pickled cucumbers.

Add cucumbers to the pan and simmer for 3-5 minutes.

Add barley and fried vegetables with cucumbers to the pan.

Add tomato paste, bay leaf, peppercorns and salt to taste.

Add dried dill, simmer, covered, for 12-15 minutes.

Lean pickle is ready. Pour into plates and serve.
