Eggplant with tomatoes and garlic

Eggplant, tomato and garlic are a great combination. A delicious appetizer of eggplant with tomatoes and garlic will decorate any table. This easy-to-prepare dish is sure to be appreciated by your guests.

Tomatoes 2 pcs

Eggplant 1 pc

Garlic clove 2 pcs

Provencal mayonnaise 30 g

Dill 1 bunch

Vegetable oil (for frying)

Salt to taste


Wash vegetables and herbs well.

Cut the eggplant into slices and salt.

Fry in a pan with a little oil on both sides until tender.

Chop the dill and garlic finely.

Cool the fried eggplant circles, brush with mayonnaise, sprinkle with garlic and herbs and lay out with tomato slices.
