Zucchini stew

Zucchini stew is the most summertime dish with no extra calories.

Cooking time 30 minutes

Ingredients

Zucchini 1 pc

Tomato 2 pcs

Onion 1 pc

Bell pepper 1 pc

Vegetable oil 2-3 tbsp. l.

Salt to taste

Pepper to taste

Preparation

Peel the courgettes and cut into large pieces.

In a frying pan with vegetable oil, fry finely chopped onions and carrots, cut into strips, 2-3 minutes.

Add diced tomatoes and bell peppers, cook for 2-3 minutes.

Add zucchini and simmer covered for 10-15 minutes over low heat.

Season with salt and pepper.

Zucchini ragout is ready. Arrange in deep bowls and serve.
