Cod with tomatoes and olives, these deliciously tender pieces simmered in tomato sauce will be appreciated by all lovers of this wonderful fish.
Cooking time 25 minutes
Cod fillet 150 g
Mashed tomatoes 100 g
Canned black olives 10 pcs
A clove of garlic 1 pc
Vegetable oil 2 tbsp. l.
Dried Provencal herbs 1/2 tsp
Lettuce leaves (for decoration)
Salt to taste
Finely chop the garlic and onion.
Fry onion and garlic in a skillet in vegetable oil for 1 minute.
Add Provencal herbs to the pan with onions.
Add mashed tomatoes and simmer over low heat for 2-3 minutes.
Cut the fish fillet into small pieces.
Place fish in tomato sauce, stirring gently.
Cook covered over low heat for 15 minutes. Add chopped olives in halves. Salt to taste.
Cod with tomatoes and olives are ready. Place on a plate with lettuce and serve.
