Fry finely chopped onions in vegetable oil.
Add the sliced eggplant. Fry for 2-3 minutes.
Add diced bell peppers.
Add the diced tomatoes. Fry for another 3 minutes.
Add finely chopped garlic. Season with salt and pepper.
Mix well and place on a serving dish. Sprinkle with finely chopped dill. Serve to the table.
