Chicken with pumpkin "Taste of Autumn" is an excellent combination of lean meat with vegetables.
Cooking time 30 minutes
Chicken breast 1 pc
Pumpkin 200 g
Onion 1 pc
Carrot 1 pc
Vegetable oil 2-3 tbsp. l.
Salt to taste
Ground pepper to taste
Parsley (greens) to taste
Remove the skin from the chicken breast and separate the fillet from the bones. Peel the onions and carrots.
In a frying pan with vegetable oil, fry the chopped chicken in pieces for 5-7 minutes.
Add finely chopped onions and diced carrots, cook for another 3-5 minutes.
Peel the pumpkin and cut into cubes.
Add the pumpkin to the pan, season with salt and pepper to taste.
Add some water and simmer covered over medium heat for 10-15 minutes.
Put the cooked chicken with pumpkin on a dish and sprinkle with finely chopped parsley, and serve.
