Vegetables with macaroni and cheese

Vegetables with macaroni and cheese, this dish is not ashamed to be served to any guests and you can cook it in just 25 minutes.

Spiral pasta 200 g

Cheese 50 g

Butter 20 g

Eggplant 1 pc

Tomatoes 2 pcs

Onion 1 pc

Carrot 1 pc

Parsley (greens) 1 bunch

Dill (greens) 1 bunch

Garlic clove 2 pcs

Vegetable oil 3 tbsp. l.

Cherry tomatoes 2-3 pcs

Pepper to taste

Salt to taste


Boil the pasta until tender in salted water. Add butter and stir.

Wash the eggplant and carrots and cut into cubes. Finely chop the onion. Fry the onion, eggplant and carrots in vegetable oil for 3-5 minutes.

Add the diced tomatoes. Simmer for another 2-3 minutes.

Add finely chopped dill, parsley and garlic. Season with salt and pepper.

Put pasta in a deep bowl, vegetables on top.

Sprinkle with grated cheese. Garnish with herbs and chopped cherry tomatoes. Serve to the table.
